Type indication

The type of flour indicates the mineral content, or as the milling industry expresses it – the ash in the flour.

The designation type 480 means that in 100 g of flour, approx. 480 mg or 0.480% mineral nutrients are contained in the flour.

In this analysis, 5 g of flour are burned in small, gold-plated bowls at 900°C in a muffle furnace.  The remains are the mineral salts, which can be precisely weighed with a laboratory scale to 100,000th of a gram. The whole-grain ash of wheat comes to between 1.6 – 1.9%, depending on the year of harvest and variety.
